Dairy-Free Ice Cream - Try this Almond and Honey Recipe

I scream, you scream, we all scream for Ice Cream! It seems like just about everyone loves ice cream for dessert…but not everyone can eat it without feeling sick! That’s why there’s a need for all kinds of ice cream, including ice cream that doesn’t contain dairy for the lactose intolerant. If you’re wondering how that works, keep in mind there are lots of dairy-free foods on the market these days, with almond milk being just one of the many ingredients that result in a lactose-free milk substitute. Intrigued? One of my favorite chef bloggers is Jamie Oliver, and I regularly whip up his Almond & Honey Dairy-Free Ice Cream for my family and friends, several of whom are lactose intolerant. Here’s the scoop (pun intended) on how to make this delicious almond & honey dairy-free ice cream:

Ingredients for Almond & Honey Dairy-Free Ice Cream

  • 500 ml/2 cups Almond Milk
  • 500 ml/2 cups Hazelnut Milk
  • 4 Tbsp Sugar
  • 4 Tbsp Runny Honey
  • 500 grams/2 cups Soya Yogurt
  • 1 splash Amaretto (optional)

Cooking Steps for Almond & Honey Dairy-Free Ice Cream

Put the almond milk, hazelnut milk, sugar, and honey in a small saucepan and simmer it all over low heat so the sugar dissolves (but don’t let the mixture boil).

Let the mixture cool, and then whisk in the Soya yogurt and amaretto.

Put the mixture in an ice cream maker and churn until it’s thick and frozen (make sure you follow the instructions on your ice cream maker).

Remove the ice cream and place in a medium bowl and freeze for at least one hour.

Top with crushed toasted almonds or any equally delicious toppings you like.

  • 31 calories
  • 0.7 grams of protein
  • 0.8 grams of fat
  • 5.2 grams of carbohydrates
  • 0.2 grams of fiber
  • 5.2 grams of sugar

As you can see from the nutrition facts, this dairy-free ice cream ranks pretty well on the Good For You/Bad For You scale (which exists pretty much only in my mind). The sugar content isn’t off the charges, nor is the fat content. And even better, you can eat it despite being allergic or sensitive to dairy or gluten! What’s not to love?
