Whether you’re focused on improving your health, trying to eat better and manage weight, or powering your fitness regime with smart, nutritious eating, start by boosting the nutrition of your breakfast. The traditional bacon-and-eggs breakfast combination isn’t exactly groundbreaking, but adding a sweet potato to the mix is a great, unexpected way to take a healthy breakfast to the next level. After all, sweet potatoes are the best source of beta-carotene, which the body converts to vitamin A. This vitamin helps improve vision, boost the immune system as well as the function of major organs—such as your heart, kidneys, and lungs.
But the benefits of sweet potatoes don’t stop there—they feature plenty of magnesium, iron, fiber, and potassium, as well. Of course, the protein supplied by a little bacon and the powerhouse of all protein, eggs, doesn’t hurt either. So why not combine all three of these healthy, delicious foods for a fantastic breakfast that will fuel your body? That’s exactly what FitMenCook’s Bacon and Egg Stuffed Sweet Potato recipe aims to do (and have I mentioned my massive foodie crush on Kevin McCurry? I digressed: Here’s what you need to know to make this awesome new twist on a healthy breakfast—and note that the sweet potato will take about 45 minutes to cook, so plan accordingly.
Ingredients for 2 Servings of Bacon and Egg Stuffed Sweet Potato:
- 1 medium sweet potato
- 2 eggs
- 2 slices of turkey bacon (preferably uncured and free of nitrates, such as Applegate’s Natural Turkey Bacon)
- Fresh rosemary
- Sea salt
- Black pepper
- Preheat your oven to 400F.
- Bake the sweet potato for 45 minutes or until a little soft, yet still slightly firm.
- Slice the sweet potato in half and scoop out some of the inside to make a hole you can fit the egg in.
- Take one slice of turkey bacon and wrap it around the sides of the hole.
- Crack an egg in a bowl.
- Pour the egg white into the hole in the potato, and then add the egg yolk. If you’re worried about overcooking the yolk, you can add in just the egg white, cook the potato 90 percent, and then add the yolk once the potato is almost cooked through.
- Bake the potato for 25 minutes at 400F, or until the egg white is completely cooked.
- Add the 3 seasonings to the sweet potato and enjoy it while it’s still warm!
One serving of this sweet potato, egg, and bacon combo has:
- 295 calories
- 17 grams protein
- 7 grams fat
- 41 grams carbohydrates
- 7 grams fiber
- 17 grams sugar
